They could survive without Bilbo but without Bilbo, they would have been caught/dead soon and if not, dead by the time they get to Smaug.
Yeah, it's the other way around now. (Go Bilbo!) Thorin's still pretty much the leader in my view. Bilbo is just the burglar and saver for the dwarves.
