what do you think would happen if Bilbo was caught while stealing the keys from the butler?
If the guard woke up and grabbed Bilbo's hand. He would see nothing but feel something then he would let go in shock and Bilbo would scuttle away. Then after Bilbo runs away the chief guard would throw the elf place into search mode and Bilbo would have to be very lucky again to get away.

Theres no way he could be caught the butler and the other guy was passed out dead drunk he could have brought a marching band down there and still have gotten the keys

I think that the guard would have felt Bilbo's hand but wouldn't have known who or what it was. So he probably would have freaked out and called for an immediate search about what was going on. Then they would have found that the dwarves would still be in there cages, so then everything would have gone back to normal because Bilbo would still be invisible the whole time.
